Aloo methi (fenugreek potatoes)

A nice and sweet side dish.

Ingredients

  • 1 tbsp oil
  • 1 tsp cumin seeds
  • 1 tsp black mustard seeds
  • 1 clove garlic, crushed or chopped finely
  • 1 cm ginger, chopped
  • 2 green chili peppers, slit
  • 3 large potatoes, peeled, boiled and cubed
  • 1 tomato, skinned and chopped
  • 1 tsp red chili powder
  • 1 1/2 tsp coriander powder
  • 1 tsp garam masala
  • 1/2 cup of water
  • 1 1/2 cup fenugreek leaves
  • 1 tbsp jaggery (palm sugar)
  • 1 tbsp sour cream

Preparation

  • heat the oil in a kadai or non-stick pan
  • add the cumin and mustard seeds, allow to splutter
  • add chilies, garlic and ginger and gently fry until garlic is light brown
  • add the potato cubes, fry until the potatoes soak up the oil (about 5 mins.)
  • add the tomato, leave for a couple more minutes, stirring every now and then
  • add water and fenugreek leaves, masalas and jaggery, stir well
  • leave to boil for a couple of minutes, then add sour cream, it's done when it starts boiling again
